Chicken Pot Pie (Dutch Oven)
4 boneless chicken breasts, cubed and cooked
1 can Cream of Potato Soup
1 can Broccoli Cheese Soup
1 pkg frozen veggies (your choice)
1 cup milk
Salt and Pepper to taste
3 cups Baking Mix (Bisquick)
Place chicken chunks in Dutch Oven. Add next 5 ingredients and mix.
Combine Bisquick, eggs and milk in a bowl. Pour over chicken mixture.
Cook at 350 degrees for about an hour or until top is golden brown. If cooking w/ charcoal, heat to 350 degrees (more coals on lid) and cook for 1 hour, rotating cover and dutch oven every 15 min. to avoid hot spots

I have many dutch oven recipes that can be cooked over a campfire. This one I found online and embellished on it. Because this one really needs to be baked (as well as the Chicken Enchilada one) it is better to use charcoal or coals from the campfire to provide the heat. If you are baking, you want the heat to cook mostly from the top down. Stews and soups and such can be cooked over the fire where it cooks from the bottom up.
