with any recipes that say "heat one side of your grill" - what do you do if your burners on your grill go left to right and you have either 2 or 3 rows of them?

Most recipes that call for placing the meat on the side not being directly heated need a block or square to put the meat on because of the shape of the meat.

If the burners are rows what is an alternative way to accomplish the same method of cooking?

David, our Grill Master says, yes, the burners on many grills run left to right. But it shouldn’t hinder indirect heat cooking. Preheat the grill as instructed, and if you have 2 burners, turn off the front one. If you have three, turn off the front two and leave the back burner on. Put the food to be cooked on the front side of the grill. Even a large item such as a turkey will fit on the front half, or front 2/3, without touching the lit back burner. And when cooking a large item over indirect heat, always be sure to put a drip pan underneath it. You can fit a disposable aluminum pan directly on the turned-off burners, underneath the grill rack. It’s crucial to close the lid when cooking over indirect heat, because you’re essentially making an oven. Most modern grills have a thermometer on the lid, and you have a fair amount of control even when cooking over indirect heat. You can monitor the temperature and keep the heat fairly high, increasing the gas on the back lit burner if necessary to keep the heat level.

Speaking of grilling, I highly recommend the Grill Master's recipe "Chicken Wings for Everyone You Know." Way back in May, my husband and I hosted an informal dinner party with a cheese fondue as the main course. Since we wanted to satisfy the needs of our carnivorous friends, we made the grilled chicken wings, which we served as an appetizer with a ready-made blue cheese sauce and crunchy celery stalks. We made a double batch. The large bowl was filled to the rim and got devoured in no time. They were so easy to make and so delicious! Put lots of  extra napkins and lemon water to clean sticky fingers! So if you are looking for a quick and easy grilling recipe to share with your cabin guests try it.
